Pearls and Raw Vegan Cacao Truffles

My dad went to Las Vegas last week and he brought us home a few things. He brought me a box. And in the box was a can, which looked like a can of tuna. And in the can was an oyster. And I was to pry open the oyster. And inside the oyster was... a pearl! Isn't that so neat? The little gift came with a chain and a teensy little wee metal cage to place the pearl. It was instantly very sentimental to me, as I can already invision myself passing this necklace on through my future family generations... how beautiful!

I am very much so enjoying raw foods and veganism, as I feel just splendid. I'm ultra-connected to the Earth and I feel overflowed with joy and peace that flows freely through my life. I'm very in tune with my Divine or Higher Self and veganism is just a beautiful addition to my super eternal being. Want to know what's even cooler about being spiritual and feeling connected to the Universe? You allow your passions to guide you and more easily surrender to life's flow. Which I have done! In one of my previous posts I talked about how I had an epiphany and have decided to follow my dreams NOW rather than LATER! Releasing fear and all that lovely stuff. I am officially enrolled in school to study Holistic Nutrition, and I couldn't be more excited - not only to begin pursuing my dreams and goals, but because I listened to my heart and my intuition, and I am allowing it to flow freely, like releasing sand from your fist, through my life.

Today I made some raw vegan cacao coconut truffles and I would like to share this marvelous recipe. I am not exaggerating when I say that these little guys taste exactly, if not better, than your typical full-butter, sugar-loaded chocolate goodies. The only difference is that these are actually extremely nutritious, and well, a hell of a lot simpler and quicker than baking!:

  • 3 cups walnuts or pecans
  • 1 cup medjool dates (about 14 or so, these are what make the truffles sweet!)
  • 5-6 tbsp raw organic cacao (not cocoa, CACAO - the rawest, purest form of chocolate)
  • 1-2 tbsp flaxseeds, hempseeds, goji berries (These are totally optional but are awesome. You can throw in anything that you think would be nice!)
  • 1/2 cup water (for blending the nuts and dates together - only if you are using a blender)
  • About a cup of shredded organic coconut
I used a blender because I don't have a food processor, but if you have one then by all means go wild.
Place the nuts in the blender and blend them up. Add the water and the dates and puree it all together. Add the flaxseeds or whatever fun ingredients you choose. Add the cacao. (You can add a tbsp or two of the shredded coconut into the mixture if you want it in the truffles) Blend.
Pour the mixture into a bowl and place in the freezer for about 30 mins. The mixture will be on the gooey side so it's just a good idea to firm it up a bit.
Begin rolling the mixture into little balls in the shredded coconut, and you're done! Keep them in the freezer to keep them firm. So quick and absolutely decadent and delicious. Makes 20-25 truffles.

All of these ingredients are highly nutritious. Especially the raw cacao. Cacao, chocolate in it's purest form, is extremely high in antioxidants - moreso than red wine, blueberries and green tea. It's also very rich in zinc, magnesium and beta-carotene. An absolute superfood for sure. It's great to add to a smoothie or anything to make something super duper :)

Hope whoever tries this enjoys it! Well you will for sure.

Good Vibrations

My "Law of Attraction" necklace

The other night I was researching about the law of attraction, setting your vibrational tone and things like that, and the next day I really wanted to practice sending out positive vibrations and thoughts and see if anything would happen. Well, I got some gift cards for Christmas for the thrift store (my favourite place) and I was looking at a necklace I really liked.

Without even thinking about the law of attraction, I was just happily mindin' my own business while in my head wanting and wishing the necklace was free. "I wish I didn't have to pay for this..." I got to the line up and a man in front of me was doing an exchange. I guess the way the store worked was that the item you're exchanging has to be the same price as your previous item. So the man had a few dollars left to spend in order for the transaction to go through, and he eagerly turned to me and said, "how much is that? Here give me it," and he got the cashier to ring it through.

I got the necklace for free!! Is that not mysterious and cool?? Totally blew my mind. How often does that happen? Seriously.

So last night I was at the bookstore and was reading a bit of The Secret. It's all about the law of attraction and I'm totally aware of it now. I truly do believe that if you are thinking about what you do want (in regards to anything in life) as opposed to focusing on what you don't want, then the Universe sends good things!

Have a positive mindset... re-condition yourself to always think good thoughts rather than negative ones. Send out good vibrations and the Universe will send them back to you!

Snow & Meditation

I've been very sick the past several days with the flu. It hasn't been very nice at all. I had a really high fever for a couple of days, and whenever I get a fever I get delirious. One time when I had a fever I was in bed and I thought there were a bunch of businessmen in my bedroom who I had to give all my blankets to (???). And the other day I was half sleeping/tossing/turning/moaning/crying out of discomfort and I thought I was wearing a polka dot dress...?

Anyway, what I wanted to write about was something that was very lovely that I did yesterday. When I was meditating, I suddenly came up with the idea that I wanted to relocate my meditation to my backyard in the snow. So I got off my mat, put on my brothers big winter coat, a hat and scarf, mittens and my boots and I went out into my backyard. And I flopped onto the thick fluffy snow. And I just lay there. I just looked right up to the big trees. And then a pleasant surprise, little wee frosty snowflakes slowly melted one by one one my face. It was so perfect.

Nothing else matters when you're out in nature.

Perfect Day

Today has been such a perfect day for the first day of the new year. It's been mild outside the past few days and today it was raining lightly and everywhere is just dazzled with this beautiful, fairytale-like fog. Needless to say, it was the ultimate perfect day for a walk by the lake.

As I walked towards the lake I noticed 3 flags that were so still. No wind. Stillness. Silence. I closed my umbrella and just allowed the cool drizzle of rain to feed me. And then I cried, because the happiness I feel for this life and this world is so grand. The deep feelings of appreciation I have for the beauty of simple things like rain, fog, trees and air was overwhelming in those few moments.
